HISTORY AND NUTRITION
Strawberries and rhubarb have traditionally been used together because they are both harvested in late spring. Food memories of strawberry rhubarb jam and pie are with many of us.
Whether we realize it or not, Grandma's recipes existed in Colonial days when the Dutch West India company sailed up the Hudson River in the 1700's to sell its load of sugar from the Caribbean and spices from Indonesia. Cooks for the Dutch manor houses quickly learned to use sugar to preserve the fruits of the Valley and to make those infamous fruit pies. We use their recipes today.
But should we limit ourselves to recipes of the past or should we explore new possibilities with 21st century knowledge and simple, 50 year old, proven technology--freezing and vacuum packaging? Reduced sugar is a healthy option. I experimented with this idea and this fruit sauce product is the result.
